Lillian Tompkins

Lillian Tompkins:
Founder and CEO

Lillian founded Macro Café after many years of working out, trying to build her physique and participating in fitness competitions. She learned how to prepare her own meals with the exact macronutrient counts to help her reach her goals. Word spread about Lillian's expertise in creating recipes, and she was asked to prepare meals for friends, co-workers and family to help them achieve their personal goals. This inspired her to expand this service into a business, so she could offer nutritious meals to others who want to eat better and live healthier lives. Macro Café now offers healthy meal preparation to clients throughout the Hudson Valley.

Lillian comes from an insurance background providing employee benefits for over 24 years. RoCo Solutions, her personal insurance business, was designed to manage all insurance needs. She was a District Sales Coordinator and Special Projects Coordinator for over 20 years in Aflac and worked in the broker relations arena for over 10 years.  Her book of business continues with the support of her team.   

Along with Macro Café, Lillian teaches a HIIT fitness class at 5am three days a week.  She also guest teaches for several gyms in the area.  She is married to John who you sometimes will see delivering food or in the kitchen after his long day working at his family business.  Lillian is a mother to two boys, Robert and Cole who keep her busy attending their sporting events.

Charlotte Guernsey:
Co-Founder and CCO (Chief Creative Officer)
Charlotte has a background in fine art and is passionate about bringing business ideas to life. She owns and runs three other successful businesses locally in the Hudson Valley. (Gate House Realty, Beacon, c. 2001; Lambs Hill Venue, Fishkill, c. 2008; Lambs Hill Bridal Boutique, Beacon, c. 2017)

She met Lillian through business encounters, via Gate House Realty and Lambs Hill Bridal Boutique, and was fascinated by her knowledge of food prep and ideas.

Charlotte is constantly on the go being a mother of two toddlers, running three companies, and balancing work/home life with her husband Dennis R. Vetrano, Jr. who owns and runs a busy family law firm. She found herself eating out way too much and having a hard time dropping that last 30 pounds post pregnancies.

Thanks to Lillian, Charlotte started eating healthy, balanced meals that were always ready to go and the fat started melting away.

“Even when I was really trying to eat healthy and make good choices, I never really knew what was going in my body or what I personally needed to reach my goals. That’s why this concept is so genius to me. Someone tells me what macro count I should eat to reach my goals and gives me the food to make it happen. I don’t have to think, or grocery shop or cook. I just eat what is professionally planned and prepared for me.

 Bianka Zimmermann:
Client Specialist 
Bianka just recently graduated from the University of Tampa where she received a bachelor's degree in Exercise Physiology. Along with her degree, she has acquired multiple certifications, including Certified Personal Trainer (CPT), Fitness Nutrition Specialist, and Corrective Exercise Specialist (CES), through the National Academy of Sports Medicine (NASM). 

Bianka participated in gymnastics from a young age until she began cheerleading in middle school. During her Senior year of High School, after the end of the fall cheerleading season, Bianka decided she wanted to try something new and began working towards competing in her first bodybuilding competition. After her first NPC Bikini Competition in 2015, she fell in love with the sport and has competed in over 10 shows, both regionally and nationally, winning multiple Overall Bikini Champion titles and placing in the top 5 at a Nationally ranked competition.

Through her years of education and competing, she's learned so much about the human body and what it's capable of doing. "Competing has taught me so much about myself and how strong I am mentally and physically. It's amazing to see the ways in which exercise and proper nutrition can alter not only your physical appearance, but also your mood and mental state. Becoming committed to living a healthier life was one of the best decisions I have ever made, and I want to help others make that decision as well!”
